Rosewood Hotels - - Responsibilities: Responsible for all aspects of managing the Banquet kitchen and kitchen personnel, ensuring quality preparation of all menu items and proper handling/storage of all food items in accordance with standards.; Coordinates the purchase of all food and develops menus, maintaining approved food and labor costs.; Reviews daily banquet activities and ensures standards are maintained at a superior level on a daily basis.; Reviews daily events, assigns production and prep tasks, and communicates changes throughout the shift.; Oversees training of staff, monitors performance, and ensures closing duties are completed to standard.
