The Four Seasons Resort L?na'i is looking for a Sushi Cook IV who shares a passion for excellence and who infuses enthusiasm into everything they do. What You'll Do

The Sushi Cook IV is an entry-level culinary position responsible for preparing and plating menu items in accordance with Four Seasons standards. This role focuses on mastering one station, learning product knowledge, and building consistency in preparation and presentation. Responsibilities include, but are not limited to, the following:

  • Prepare all basic ingredients, set-ups, and sauces for the sushi bar team.
  • Manage inventory, sanitation set-ups, and maintain accurate records.
  • Set up the sushi bar before service, including refilling all containers and sauce bottles with backups.
  • Complete weekly prep tasks as assigned by the sushi supervisor or sushi chef within specified timelines.
  • Ensure all sushi stations and sauces are fully stocked and ready daily for service.
  • Assist with basic sushi plating and roll preparation during service.
  • Understand basic fish descriptions, identification, preparation methods, and maintain quality in line with Nobu standards.
  • Perform basic sushi plating and maki roll making, progressing to Sushi Cook III's level upon meeting Nobu's quality standards.

What to Bring

  • Successful candidate must possess legal work authorization in United States.
  • Required by the Hawaii State Department of Health to obtain a Tuberculous (TB) clearance card.
  • Culinary and Sushi knowledge is required for this position.
  • Ability to stand for extended periods, lift up to 50 lbs, and push/pull as needed during shifts.
  • Weekend and Holiday availability required.
